Whip up a batch of this irresistible savory granola using just a few pantry staples!

A flatlay image of all the ingredients needed to make savory granola, including rolled oats, raw sunflower seeds, raw pumpkin seeds, raw black and white sesame seeds, olive oil, black pepper, ground turmeric, garlic powder, and salt, arranged on a marble background.
    • Old-Fashioned Rolled Oats: Rolled oats are the ideal choice for making granola as they contribute a delightful crunch and are perfect for creating clusters or chunks in the mixture. Use certified gluten-free rolled oats if necessary.
    • Mixed Seeds: This recipe calls for a combination of sunflower seeds, pumpkin seeds, and sesame seeds. However, feel free to get creative and mix in your preferred nuts and seeds for added variety and flavor.
    • Olive Oil: Acting as a binding agent, olive oil adds moisture and enhances the texture of the granola. While other seed oils like avocado oil can work as substitutes, I highly recommend using olive oil for its distinct flavor profile.
    • Spices: To infuse the granola with a delicious taste, we incorporate ground turmeric, garlic powder, and black pepper. These spices provide a delightful flavor combination, while a touch of sea salt helps elevate the overall taste experience.

    How to make savory granola

Making your own homemade granola is super easy with this simple recipe! Just follow two steps, and in just around 20 minutes, your delicious savory granola will be ready.

    Before you start

    • Preheat your oven to to 356°F (180°C).
    • Line a baking sheet with parchment paper or a silicone mat for easy cleanup. A quarter sheet pan works well for this recipe, but you can also use any larger baking sheet.
    • Gather the ingredients.

    Step 1: Mix the ingredients

Simply add all the ingredients to a large mixing bowl and combine them using a spatula. Ensure that every oat and seed is evenly coated with the aromatic blend of olive oil and spices.

    Step 2: Bake

Spread the granola mixture evenly onto a baking sheet, creating a flat layer. If the entire batch doesn’t fit on one baking sheet, you can use two trays instead.

A tray of savory granola mix spread evenly, ready to be baked. The mixture consists of oats, seeds, and spices.

Place the baking sheet in the preheated oven and bake for about 10 minutes. After that, remove the baking sheet from the oven and give the granola a gentle stir. This will ensure even browning and prevent any pieces from burning.

Return the baking sheet to the oven and continue baking for an additional 5 minutes, or until the granola turns a beautiful golden brown. It’s important to keep a close eye on it to prevent burning or over-browning, as the time may vary depending on your oven or the moisture content of your granola.

Tip: To quickly test if your granola is done, remove a few pieces from the baking pan and allow them to cool on a plate. If they harden within 3 minutes, it’s done. If not, continue baking until it reaches a crunchy texture at room temperature. Just remember to remove the baking sheet from the oven while you wait.

Once done, remove the baking sheet from the oven. The granola may still be slightly soft, but it will firm up and get crunchy as it cools. Allow the granola to cool completely on the sheet.

    Tips & recipe notes

    • To ensure even baking and prevent burning, I prefer to gently stir my granola halfway through the baking process. If your oven has hot spots, keep a close eye on the pan to make sure you don’t burn it.
    • It’s also important not to overlap the granola on the baking sheet for it to bake uniformly. If the granola is too crowded on the tray, some portions may become undercooked or soggy while others become overcooked. By arranging the granola in a single layer without overlapping, you’ll achieve a more consistent and delicious outcome.

    Variations, additions & swaps

While I love this recipe just as it is, this savory granola is a great base recipe to add-ins and flavor variations. Feel free to get creative and customize your homemade granola to suit your taste preferences! Here are some ideas:

    • While I used oats and a mix of seeds in the original recipe, feel free to incorporate your favorite nuts for extra flavor and crunch. You can try adding chopped almonds, walnuts, pecans, or cashews. Just make sure to keep the total volume of nuts to around 3/4 cup. If you add more nuts, you may need to adjust the amount of wet ingredients. In that case, you can add a little more olive oil to ensure all the nuts, seeds, and rolled oats are well coated.
    • Experiment with different spices and herbs to add unique flavors to your granola. Consider experimenting with ginger, rosemary, thyme, paprika, cumin, or smoked paprika for a delightful twist. If you’re looking for a cheesy flavor, try adding nutritional yeast for a deliciously savory touch.
    • If you like a bit of spiciness, you can create a spicy granola by adding a pinch of cayenne pepper, chili flakes, or a dash of hot sauce.

    Serving suggestions

Here are some delicious ways to enjoy your savory granola:

    • Sprinkle over your favorite salads to add a crunchy texture and savory flavor. It pairs well with mixed greens or grain-based salads.
    • Use as a garnish for creamy soups or hearty stews.
    • Sprinkle over your savory breakfast bowls, such as oatmeal, quinoa, or yogurt bowls.
    • Add it as a crunchy topping to roasted vegetables like cauliflower, sweet potatoes, or carrots.
    • Sprinkle over creamy dips like hummus or baba ganoush for a flavorful contrast.
    • Top avocado toast or bruschetta for a crunchy twist.

    Storage tips

How to store homemade granola so it stays crunchy?

Before storing this savory granola, ensure that it has completely cooled to room temperature. This helps maintain its texture and crispness.

Once cooled, transfer it into an airtight container, such as a mason jar, to prevent air and moisture from entering. This will help keep the granola fresh for a longer period. Store the granola at room temperature in a cool, dry place away from direct sunlight for up to a month.

    Should homemade granola be refrigerated?

While it is possible to store this homemade granola in the refrigerator, it is recommended to avoid refrigeration as it may compromise the desired crunchy texture.

    Can you freeze granola?

Yes, granola can be frozen to extend its shelf life, but keep in mind that freezing can slightly change its texture.

To freeze, divide the completely cooled granola into individual portions using small airtight containers or resealable bags. This way, you can thaw only the amount you need without exposing the rest to moisture and air. Seal the containers tightly to prevent freezer burn and maintain quality. Freeze the granola for up to 3 months.

When you’re ready to use the granola, take out the desired portion and let it thaw at room temperature for about 10-15 minutes. For crispiness, you can bake it in the oven for 5-10 minutes or air fry it for 2-3 minutes at 356°F (180°C).

    FAQs

Why do you add oil to granola?

Oil is added to granola for its role in creating a crispy texture, binding the ingredients together, contributing to the overall flavor, and providing moisture during baking.

Can I substitute quick oats for rolled oats in granola?

While old-fashioned rolled oats are my preferred choice for achieving the best texture, you can substitute quick oats for rolled oats in granola. However, it’s important to note that quick oats have a finer texture and absorb moisture more quickly during baking, which may affect the final crispness and texture of the granola. To achieve the desired outcome, pay attention to the baking time and make any necessary adjustments to avoid overcooking or burning.

Why are homemade granola not crunchy?

Homemade granola may not be crunchy if the mixture has excessive moisture, it is not baked at the correct temperature or for the appropriate duration, or it is not allowed to cool completely after baking. To achieve a crunchy texture, carefully follow the recipe using the recommended baking settings, and allowing sufficient cooling time before handling or storing.

    Description

This savory granola is a delightful combination of wholesome oats, nutrient-packed seeds, and a harmonious blend of spices. It adds a satisfying crunch to salads and soups while elevating other dishes like breakfast bowls and roasted vegetables. Best of all, it’s easy and quick to make, and you can easily customize it with your favorite add-ins for a personalized touch.

    Ingredients

    Units Scale
    • 1 cup old-fashioned rolled oats
    • 1/4 cup sunflower seeds
    • 1/4 cup pumpkin seeds
    • 1/4 cup sesame seeds (I used half black and half white)
    • 2 tablespoons olive oil
    • 1/2 teaspoon sea salt
    • 1/2 teaspoon ground turmeric
    • 1/4 teaspoon garlic powder
    • Black pepper to taste

    Instructions

    1. Preheat your oven to 356°F (180°C). Line a baking sheet with parchment paper or a silicone mat. Set it aside.
    2. In a large mixing bowl, combine all the ingredients. Ensure that each oat and seed is thoroughly coated with the aromatic blend of olive oil and spices.
    3. Spread the granola mixture evenly onto the prepared baking sheet, forming a flat layer. If you’re making a larger batch, feel free to use two trays. The even distribution will allow for consistent toasting and crispiness.
    4. Place the baking sheet in the preheated oven and bake for about 10 minutes, then carefully remove the baking sheet from the oven and give the granola a gentle stir. This step promotes even browning and prevents any pieces from burning. Return the baking sheet to the oven and continue baking for an additional 5 minutes, or until the granola achieves a beautiful golden color. Keep a close eye on it to prevent any burning or over-browning.
    5. Once done, take the baking sheet out of the oven and allow the granola to cool completely on the sheet before using or storing.

    Notes

To store savory granola and maintain its freshness, allow it to cool completely before transferring it into an airtight container, and store it in a cool, dry place at room temperature.

If your granola didn’t crisp up because it was removed from the oven too early, simply place it back in the oven for a few more minutes of baking.
