Description

  • 1 medium ripe banana
  • 1 cup unsweetened almond milk (or milk of choice)
  • 1/2 teaspoon ground cinnamon
  • 1/8 teaspoon sea salt
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • 1 cup old-fashioned rolled oats (gluten-free if necessary)
  • 1 cup chopped strawberries
  • Optional: Slices of strawberries and banana to garnish

Instructions

  1. Preheat your oven to 356°F (180°C). Grease a medium-sized baking dish (mine is a 9×6-inch oval baking dish) lightly with cooking spray or oil and set it aside.
  2. In a large mixing bowl, mash the banana into a smooth puree using a fork or a potato masher. Add the almond milk, ground cinnamon, sea salt, vanilla extract, and baking powder to the bowl. Whisk everything together until well combined.
  3. Add the rolled oats and chopped strawberries to the mixture. Stir well to ensure they are evenly distributed throughout the batter.
  4. Transfer the oatmeal mixture to the prepared baking dish, spreading it out evenly. If desired, you can garnish the top with slices of strawberries and banana for added visual appeal.
  5. Place the baking dish in the preheated oven and bake for approximately 20-22 minutes, or until the oatmeal is firm and golden brown.
  6. Once baked, remove the dish from the oven and allow the baked oatmeal to cool for about 5 minutes. This resting time will help the oatmeal firm up slightly. Enjoy!

Notes

Leftovers can be stored in an airtight container in the fridge for up to 5 days. To freeze, cut the oatmeal into desired-sized slices and store them in a freezer-safe container or bag. Place parchment paper between the pieces to prevent sticking. They can be stored in the freezer for up to 3 months.

If you prefer your baked oatmeal to be sweeter, you can add 2 tablespoons of brown sugar or coconut sugar to the mixture along with the wet ingredients.
